Sweet Miso Roast Carrots w/ Sesame & Orange
/Begin with a beautiful bunch of carrots. Rinse well and trim off the tops. (Don’t disgard the greens, they can be used in salads, to make pesto etc.).
Arrange the carrots in a roasting tray and preheat the oven to 180º/350º.
In a small bowl, combine 1tbsp of sweet white miso (use brown miso if this all you have), 1 tbsp honey, 1 tbsp rapeseed oil and 1tbsp sesame oil. Squeeze in the juice of half an orange and stir well until you have a smooth marinade.
Sprinkle with sesame seeds, and slice up the other half of the orange and add it to the tray.
Roast in the oven for 15-20 minutes or until the carrots are cooked down and caramelised.
Serve with rice and a protein like chicken, salmon or tofu!!
